About Our Fish

Our method of catching Albacore tuna is trolling. We land the fish on a white piece of plywood cut to fit into a plastic tote. The fish is then bled immediately.

Because Albacore forms histamine quickly, it’s critical to get the core temperature to below 40 degrees Fahrenheit as soon as possible. So the fish are placed on ice to begin the cool down. Our fish typically are held with a core temperature of 35 degrees Fahrenheit.

Every hour the albacore is placed into the fish hold which is an insulated fiberglass compartment that holds ice. The first layer in the fish hold is a solid flake ice approximately 12", then a single layer of fish followed by another 6" of ice. The fish is completely covered with ice during the entire duration of the trip.

We clean and sanitize the landing area with a diluted solution of chlorine bleach everyday and the fish hold after each trip. The maximum amount of time that your fish will sit in the fish hold is three days.

The fish our customers receive is caught within 36 hours of delivery. Iced tuna is the best quality for the home packer, it's easy to loin, and has never been frozen.

The average weight of our Albacore Tuna is 13 pounds. We will customize orders for those customers that are interested in a larger fish (20+).
